One of our most effective tools for improving planetary health is the food we choose to eat. In environmental terms, a vegetarian diet is great and a vegan diet is even better. However, imagining that the bulk of the population will willingly shift to a vegan diet over the next few years seems pretty unlikely (to put it mildly). So, where does that leave us?
